- 2 pounds ground beef
- 1 large onion, chopped
- 2 bell peppers, chopped
- 3 cloves garlic, minced
- 1 (28 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can kidney beans, drained and rinsed
- 1 (15 ounce) can pinto beans, drained and rinsed
- 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
- 1 (6 ounce) can tomato paste
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- Brown the ground beef in a skillet over medium-high heat. Drain off any excess grease.
- Transfer the browned beef to your slow cooker.
- Add the chopped onion, bell peppers, and minced garlic to the slow cooker.
- Stir in the diced tomatoes, kidney beans, pinto beans, Rotel, and tomato paste.
- Add the chili powder, cumin, oregano, salt, black pepper, and cayenne pepper (if using).
- Stir everything together until well combined.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Serve hot and enjoy!
Notes
- For a thicker chili, mash some of the beans against the side of the slow cooker.
- Adjust the cayenne pepper to your spice preference.
