3 lb pork shoulder (Boston butt), trimmed
1 cup low-sodium soy sauce
1/2 cup honey
1/4 cup apple cider vinegar
1/4 cup packed brown sugar
6 cloves garlic, minced
1 teaspoon ground ginger
1/2 teaspoon black pepper
1/4 cup water
Instructions
Place the pork shoulder in the bottom of your slow cooker.
In a medium bowl, whisk together the soy sauce, honey, apple cider vinegar, brown sugar, minced garlic, ginger, pepper, and water until the sugar dissolves.
Pour the sauce mixture over the pork shoulder in the slow cooker.
Cover the slow cooker and cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the pork is very tender.
Remove the pork from the slow cooker and place it on a cutting board. Skim any excess fat from the sauce remaining in the slow cooker.
Use two forks to shred the pork completely.
Return the shredded pork to the slow cooker and toss it well with the sauce to coat.
Cook on the warm setting for 15 minutes before serving.
Notes
For thicker sauce, remove the liquid from the slow cooker after shredding the pork and simmer it on the stovetop until it reduces by about one-third.
Serve this pulled pork on hamburger buns with a side of coleslaw for a complete meal.
If you prefer a spicier flavor, add 1/2 teaspoon of red pepper flakes to the sauce mixture.
