A warm and comforting white chicken chili, perfect for families. This slow cooker recipe is mild and packed with tender chicken and creamy white beans.

  • 2 lbs boneless, skinless chicken breasts
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 (15 oz) cans cannellini beans, rinsed and drained
  • 1 (4 oz) can diced green chilies
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional toppings: shredded cheese, sour cream, cilantro, avocado

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add onion, garlic, cannellini beans, and diced green chilies.
  3. Pour in chicken broth.
  4. Stir in cumin, oregano, salt, and pepper.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
  6. Remove chicken and shred it with two forks. Return shredded chicken to the slow cooker and stir.
  7. Serve hot with your favorite toppings.

Notes

  • For a thicker chili, you can mash some of the beans against the side of the slow cooker before serving.
  • Adjust seasoning to your taste.
  • This chili freezes well.
