Make this fresh, sweet, and spicy mango salsa using jalapeño and lime. It is a simple, no-cook recipe perfect for chips, tacos, or grilled food.

Ingredients

  • 2 large ripe mangoes, diced
  • 1/2 red onion, finely diced
  • 1 jalapeño pepper, seeded and minced (use more or less based on heat preference)
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare all your vegetables and fruit: dice the mangoes, finely dice the red onion, and mince the jalapeño.
  2. In a medium bowl, combine the diced mango, red onion, minced jalapeño, and chopped cilantro.
  3. Pour the fresh lime juice over the mixture.
  4. Add the salt and black pepper.
  5. Gently stir all ingredients together until they are evenly mixed.
  6. Cover the bowl and let the salsa rest in the refrigerator for at least 15 minutes before serving. This allows the flavors to combine.
  7. Taste the salsa before serving and adjust salt or lime juice if needed.

Notes

  • For a milder salsa, remove all seeds and white membrane from the jalapeño. For hotter salsa, leave some seeds in or substitute with a habanero pepper.
  • This salsa pairs well with tortilla chips, grilled fish, chicken, or pork tacos.
  • Store leftover salsa in an airtight container in the refrigerator for up to 3 days.
