1 pound shrimp, peeled and deveined
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
Salt and pepper to taste
2 tablespoons olive oil
8 small corn tortillas
For the Slaw:
2 cups shredded cabbage
1/4 cup chopped cilantro
2 tablespoons lime juice
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
In a bowl, toss the shrimp with chili powder, cumin, garlic powder, cayenne pepper, salt, and pepper.
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
Add the seasoned shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through.
While the shrimp cooks, prepare the slaw. In a separate bowl, combine the shredded cabbage, cilantro, lime juice, 1 tablespoon olive oil, salt, and pepper. Toss to coat.
Warm the corn tortillas according to package directions.
Fill each tortilla with cooked shrimp and top with the tangy slaw.
Notes
For extra heat, add more cayenne pepper to the shrimp seasoning.
You can substitute pre-shredded coleslaw mix for the shredded cabbage.
Serve with your favorite taco toppings like avocado, salsa, or sour cream.
