Make this hearty and spicy chili using ground turkey and white beans. It is a quick, flavorful meal suitable for a weeknight dinner.

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (4 ounce) can green chilies, undrained
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (or more for extra heat)
  • 1/4 cup chili powder
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (15 ounce) can Great Northern beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 bay leaf

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, cumin, oregano, salt, pepper, cayenne pepper, and chili powder. Cook for 1 minute until fragrant.
  4. Add the green chilies, cannellini beans, Great Northern beans, diced tomatoes (with juice), chicken broth, and bay leaf to the pot.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for at least 30 minutes, stirring occasionally.
  6. Remove the bay leaf before serving. Adjust salt and cayenne pepper to your taste.

Notes

  • For a thicker chili, remove about 1 cup of the beans and mash them before returning them to the pot during the last 10 minutes of simmering.
  • Add toppings like shredded cheese, sour cream, chopped cilantro, or diced avocado when serving.
  • If you prefer a milder flavor, start with just 1/8 teaspoon of cayenne pepper.
