A simple recipe for a fresh spring mix salad featuring strawberries, goat cheese, and a light vinaigrette dressing.

  • 5 ounces spring mix greens
  • 1 cup fresh strawberries, sliced
  • 4 ounces goat cheese, crumbled
  • 1/2 cup pecans, toasted
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup balsamic vinaigrette dressing

Instructions

  1. Wash and thoroughly dry the spring mix greens. Store them in the refrigerator until ready to assemble.
  2. Slice the fresh strawberries.
  3. Toast the pecans in a dry skillet over medium heat for 3 to 5 minutes until fragrant. Let them cool.
  4. In a large bowl, combine the spring mix, sliced strawberries, toasted pecans, and thinly sliced red onion.
  5. Gently toss the salad ingredients with the balsamic vinaigrette dressing until lightly coated.
  6. Divide the salad onto serving plates.
  7. Top each serving with crumbled goat cheese just before serving.

Notes

  • To keep your spring mix fresh, store it unwashed and dry in the crisper drawer of your refrigerator. Wash right before use.
  • For a different flavor, try a poppy seed dressing instead of balsamic vinaigrette.
  • Walnuts can substitute for pecans if preferred.
  • For entertaining, assemble the salad components but keep the dressing and goat cheese separate until serving time.
