  • 8 oz thin rice vermicelli noodles
  • 1 cup shredded carrots
  • 1 cup thinly sliced cucumber
  • 1 cup shredded red cabbage
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup chopped peanuts, for garnish
  • 1 lb cooked shrimp, sliced chicken, or baked tofu (optional protein)
  • For the Peanut Sauce:
  • 1/2 cup creamy peanut butter
  • 1/4 cup warm water
  • 3 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Cook the rice vermicelli noodles according to package directions. Drain them and rinse immediately with cold water to stop the cooking process. Set aside.
  2. Prepare the peanut sauce: In a medium bowl, whisk together the peanut butter, warm water, soy sauce (or tamari), rice vinegar, sweetener, lime juice, minced garlic, grated ginger, and red pepper flakes, if using. Add more water, one teaspoon at a time, until the sauce reaches your desired pouring consistency.
  3. Assemble the bowls: Divide the cooled rice noodles among four serving bowls.
  4. Arrange the fresh ingredients on top of the noodles: place the shredded carrots, cucumber, red cabbage, mint leaves, and cilantro attractively over the noodles.
  5. Add your chosen protein (shrimp, chicken, or tofu) to each bowl.
  6. Drizzle a generous amount of the homemade peanut sauce over all the ingredients in each bowl.
  7. Garnish with chopped peanuts before serving.

Notes

  • For a vegetarian or vegan bowl, use baked or pan-fried tofu, or omit the protein entirely.
  • If you prefer a gluten-free option, ensure you use tamari instead of soy sauce.
  • You can substitute romaine lettuce or butter lettuce for a crunchier base instead of just noodles.
  • If the peanut sauce thickens while sitting, whisk in a little warm water to thin it out.
