1 lb boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
1 cup uncooked white rice
2 cups water (for rice)
1 tablespoon vegetable oil
1/2 cup ketchup
1/4 cup brown sugar, packed
2 tablespoons soy sauce
1 tablespoon apple cider vinegar
1 teaspoon garlic powder
1/2 teaspoon ground ginger
1/4 teaspoon black pepper

Instructions
Cook the rice: Combine 1 cup of rice and 2 cups of water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
Prepare the sauce: In a small bowl, whisk together the ketchup, brown sugar, soy sauce, apple cider vinegar, garlic powder, ground ginger, and black pepper until well combined. Set aside.
Cook the chicken: Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned on all sides and cooked through, about 6 to 8 minutes.
Glaze the chicken: Pour the prepared BBQ sauce over the cooked chicken in the skillet. Stir constantly and cook for 2 to 3 minutes, allowing the sauce to thicken and coat the chicken completely, creating a sticky glaze.
Assemble the bowls: Divide the cooked rice among serving bowls. Top the rice with the sticky BBQ chicken.
Garnish the bowls with sliced green onions and sesame seeds, if desired. Serve immediately.
Notes
For extra flavor, you can marinate the chicken pieces in half of the sauce for 15 minutes before cooking.
If you prefer a thicker sauce, let it simmer for an extra minute or two after adding it to the chicken.
