Make easy, flavorful chicken thighs coated in a thick, sticky honey soy and garlic glaze. You can bake or pan-fry these for a quick weeknight dinner.

  • 8 bone-in, skin-on chicken thighs
  • 1/2 cup low sodium soy sauce
  • 1/4 cup honey
  • 3 tablespoons rice vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • Optional: Sesame seeds and sliced green onions for garnish

Instructions

  1. Pat the chicken thighs dry with paper towels. This helps the skin crisp.
  2. In a bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, grated ginger, sesame oil, and black pepper. This is your marinade.
  3. Place the chicken thighs in a large zip-top bag or shallow dish. Pour half of the marinade over the chicken, ensuring all pieces are coated. Reserve the other half of the marinade for the glaze later.
  4. Marinate the chicken in the refrigerator for at least 30 minutes, or up to 4 hours.
  5. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius) if baking, or heat 1 tablespoon of neutral oil in a large skillet over medium-high heat if pan-frying.
  6. **If Baking:** Arrange the chicken thighs skin-side up on a baking sheet lined with parchment paper. Bake for 25 to 30 minutes, or until the internal temperature reaches 165 degrees Fahrenheit.
  7. **If Pan-Frying:** Sear the chicken thighs skin-side down for 6 to 8 minutes until the skin is golden brown and crisp. Flip and cook for another 8 to 10 minutes until cooked through.
  8. While the chicken cooks, prepare the glaze. Pour the reserved marinade into a small saucepan. Bring it to a simmer over medium heat.
  9. In a small bowl, mix the cornstarch and cold water to create a slurry. Whisk the slurry into the simmering sauce. Continue to cook, stirring constantly, until the sauce thickens into a sticky glaze, about 1 to 2 minutes. Remove from heat immediately.
  10. Once the chicken is cooked, brush the sticky glaze generously over all sides of the chicken thighs.
  11. Serve immediately garnished with sesame seeds and green onions. This pairs well with steamed rice and steamed broccoli.

Notes

  • For extra crispy skin, broil the chicken for the last 2 minutes after applying the glaze, watching carefully to prevent burning.
  • You can make the glaze ahead of time and simply reheat it before brushing onto the cooked chicken.
  • If you prefer boneless, skinless thighs, reduce the cooking time by about 5 to 7 minutes.
