1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
1 tablespoon vegetable oil
1/2 cup sweet chili sauce
1/4 cup soy sauce
2 tablespoons brown sugar
1 tablespoon rice vinegar
1 teaspoon grated fresh ginger
2 cloves garlic, minced
1 teaspoon cornstarch mixed with 2 teaspoons cold water (slurry)
Sesame seeds, for garnish
Sliced green onions, for garnish
Instructions
Pat the chicken pieces dry with paper towels. Season lightly with salt and pepper.
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 6 to 8 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, combine the sweet chili sauce, soy sauce, brown sugar, rice vinegar, ginger, and garlic. Bring the mixture to a simmer over medium heat, stirring until the sugar dissolves.
Whisk the cornstarch slurry one more time and pour it slowly into the simmering sauce, stirring constantly. Cook for about 1 minute until the sauce thickens and becomes sticky.
Return the cooked chicken to the skillet. Toss gently to coat all the pieces evenly with the sticky sauce.
Remove from heat immediately. Serve the chicken hot, garnished with sesame seeds and sliced green onions.
Notes
Serve this chicken over steamed white rice or noodles to soak up extra sauce.
For extra crispiness, you can lightly dust the chicken pieces with flour before pan-frying.
If you prefer a tangier sauce, add an extra teaspoon of rice vinegar.
