Prepare this simple, flavorful sticky teriyaki chicken quickly for a satisfying weeknight dinner.

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 tablespoon vegetable oil
  • 1/2 cup soy sauce
  • 1/2 cup water
  • 1/4 cup brown sugar, packed
  • 2 tablespoons rice vinegar
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 2 tablespoons cornstarch
  • 3 tablespoons cold water (for slurry)
  • Cooked rice, for serving
  • Steamed broccoli or green beans, for serving

Instructions

  1. Combine soy sauce, water, brown sugar, rice vinegar, ginger, garlic, and sesame oil in a small bowl. Whisk until the sugar dissolves.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the chicken pieces to the skillet and cook until browned on all sides and cooked through, about 6-8 minutes. Remove the chicken and set it aside.
  4. Pour the prepared sauce mixture into the skillet. Bring it to a simmer.
  5. In a separate small bowl, whisk together the cornstarch and 3 tablespoons of cold water to create a slurry.
  6. Pour the slurry into the simmering sauce while stirring constantly. Continue to cook and stir until the sauce thickens significantly, about 1-2 minutes.
  7. Return the cooked chicken to the skillet. Toss the chicken pieces until they are fully coated in the thick, sticky sauce.
  8. Serve immediately over rice with steamed vegetables.

Notes

  • For extra flavor, you can use chicken thighs instead of breasts.
  • Garnish with sesame seeds or sliced green onions before serving.
  • If you prefer a less sweet sauce, reduce the brown sugar to 3 tablespoons.
