Prepare a quick, flavorful shrimp stir fry featuring a thick, glossy, homemade teriyaki glaze. This recipe is perfect for a fast weeknight dinner.

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/4 cup low sodium soy sauce
  • 1/4 cup mirin (sweet rice wine)
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • 2 tbsp cold water
  • Cooked rice, for serving
  • 1 tsp sesame seeds, for garnish

Instructions

  1. In a small bowl, whisk together the soy sauce, mirin, brown sugar, rice vinegar, and sesame oil for the sauce base. Set aside.
  2. In a separate small bowl, mix the cornstarch and cold water to create a slurry. Set aside.
  3. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for 2-3 minutes per side until pink. Remove the shrimp from the skillet and set aside.
  4. Add the bell pepper and broccoli to the same skillet. Stir fry for 3-4 minutes until slightly tender-crisp.
  5. Add the minced garlic and grated ginger to the vegetables. Cook for 30 seconds until fragrant.
  6. Pour the prepared sauce base into the skillet. Bring the sauce to a simmer.
  7. Whisk the cornstarch slurry again and slowly pour it into the simmering sauce while stirring constantly. Cook for 1 minute until the sauce thickens and becomes glossy.
  8. Return the cooked shrimp to the skillet. Toss gently to coat the shrimp and vegetables completely with the sticky teriyaki glaze. Cook for 1 minute to heat through.
  9. Serve immediately over cooked rice and garnish with sesame seeds.

Notes

  • To achieve the stickiest glaze, make sure the sauce simmers before adding the cornstarch slurry.
  • Do not overcook the shrimp; they cook very quickly in the hot pan.
  • You can substitute snap peas or carrots for the bell pepper and broccoli if desired.
