  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon zest
  • 1 cup fresh strawberries, finely diced
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons butter, for cooking
  • Powdered sugar, for dusting

Instructions

  1. Prepare the filling: In a medium bowl, beat the softened cream cheese, granulated sugar, vanilla extract, and lemon zest until smooth. Gently fold in the diced strawberries.
  2. Make the egg batter: In a shallow dish, whisk together the eggs, milk, cinnamon, and nutmeg until fully combined.
  3. Assemble the toast: Take one slice of bread and spread half of the cream cheese mixture evenly over one side. Top with a second slice of bread to create a sandwich. Repeat with the remaining filling and bread slices.
  4. Cut the sandwiches in half diagonally, creating four stuffed portions.
  5. Soak the toast: Dip each stuffed sandwich half into the egg batter, turning to coat both sides completely. Let it soak for about 15 to 20 seconds per side; do not over-soak.
  6. Cook the toast: Melt 1 tablespoon of butter in a large non-stick skillet over medium heat. Place two stuffed toast halves in the skillet. Cook for 3 to 4 minutes per side until golden brown and the filling is warm. Add more butter as needed for the remaining pieces.
  7. Serve immediately, dusted generously with powdered sugar.

Notes

  • Use bread that is at least 3/4 inch thick to prevent the filling from squeezing out during cooking.
  • For a richer flavor, you can substitute half-and-half for the milk in the batter.
