  • 4 cups fresh strawberries, hulled and crushed
  • 1 box (1.75 oz) powdered fruit pectin (like Sure-Jell)
  • 5 cups granulated sugar
  • 1 tablespoon lemon juice

Instructions

  1. Prepare your strawberries: Crush the hulled strawberries in a bowl until you have about 4 cups of crushed fruit. You can use a potato masher or a blender briefly for a smoother texture.
  2. Mix pectin and sugar: In a separate large bowl, whisk together the powdered fruit pectin and the granulated sugar until they are fully combined.
  3. Combine fruit and sugar mixture: Add the crushed strawberries and the lemon juice to the sugar-pectin mixture. Stir well for about 3 minutes. The mixture will start to thicken slightly.
  4. Rest the jam: Let the mixture stand at room temperature for 20 to 30 minutes, stirring occasionally. This resting time allows the pectin to fully hydrate and the jam to set up before freezing.
  5. Jar and freeze: Ladle the jam into clean, freezer-safe jars or containers, leaving about 1/2 inch of headspace. Seal the containers and place them in the freezer. This jam is ready to use once frozen solid, usually within 24 hours.

Notes

  • For a lower sugar option, you can reduce the sugar to 3 cups, but the jam may be softer.
  • If you prefer a very smooth jam, use a food processor to pulse the strawberries until they reach your desired consistency before mixing with the sugar and pectin.
  • This freezer jam tastes best when used within 6 months, though it remains safe to eat longer.
  • If you want to use frozen strawberries instead of fresh, thaw them completely and drain off any excess liquid before crushing.
