- 4 large bell peppers
- 1 lb ground beef
- 1 cup cooked white rice
- 1/2 cup chopped onion
- 1/4 cup chopped green bell pepper
- 1/4 cup breadcrumbs
- 1 large egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 (15 ounce) can tomato sauce
- 1/2 cup shredded cheddar cheese
- Preheat oven to 375 degrees F (190 degrees C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, combine ground beef, cooked rice, chopped onion, chopped green bell pepper, breadcrumbs, egg, salt, and pepper. Mix well.
- Stuff the bell pepper halves with the beef and rice mixture.
- Place the stuffed peppers in a baking dish. Pour the tomato sauce over the peppers.
- Cover the dish with foil and bake for 45 minutes.
- Remove the foil, sprinkle with cheddar cheese, and bake for another 5-10 minutes, or until the cheese is melted and bubbly.
- Serve hot and enjoy!
Notes
- You can use any color bell peppers you like.
- For a spicier kick, add a pinch of red pepper flakes to the beef mixture.
- Leftovers can be stored in the refrigerator for up to 3 days.
