4 (6 oz) salmon fillets, skin on or off
1 tablespoon olive oil
Salt and black pepper to taste
4 ounces cream cheese, softened
1/2 cup frozen chopped spinach, thawed and squeezed dry
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1/4 teaspoon dried dill
Instructions
Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper.
Prepare the salmon: Place the fillets on the prepared baking sheet. Using a sharp knife, cut a deep pocket horizontally into the thickest part of each fillet, being careful not to cut all the way through to the other side.
Make the stuffing: In a small bowl, combine the softened cream cheese, dried spinach, Parmesan cheese, minced garlic, and dried dill. Mix until fully incorporated.
Stuff the salmon: Spoon the cream cheese mixture evenly into the pockets of the four salmon fillets. Press gently to close the opening.
Season the salmon: Brush the tops and sides of the stuffed fillets with olive oil. Season generously with salt and pepper.
Bake: Bake for 15 to 18 minutes, or until the salmon is cooked through and flakes easily with a fork. Cooking time depends on the thickness of your fillets.

Notes
For an elevated version, mix 2 ounces of lump crab meat into the cream cheese stuffing mixture before filling the salmon.
If you prefer a crispier top, place the baking sheet under the broiler for the last 1-2 minutes, watching closely to prevent burning.
