Make this hearty, one-pan Southwest Ground Beef Sweet Potato Skillet for a fast weeknight dinner. It is gluten-free and comes together in under 30 minutes, minimizing cleanup.

  • 1 tablespoon olive oil
  • 1 pound ground beef (85% lean recommended)
  • 1 medium onion, chopped
  • 2 large sweet potatoes, peeled and diced into 1/2-inch pieces
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup frozen corn
  • 1 packet (1 ounce) low-sodium taco seasoning
  • 1/2 cup water
  • 1 cup shredded cheddar or Monterey Jack cheese (optional topping)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large 12-inch skillet over medium-high heat.
  2. Add the ground beef and chopped onion to the skillet. Cook, breaking up the meat, until the beef is browned and the onion is soft, about 5 to 7 minutes. Drain off any excess grease.
  3. Add the diced sweet potatoes to the skillet. Stir them into the meat mixture. Cook for 5 minutes, stirring occasionally, to start softening the potatoes.
  4. Stir in the taco seasoning and water. Bring the mixture to a simmer, then reduce the heat to medium-low.
  5. Cover the skillet and cook for 8 to 10 minutes, or until the sweet potatoes are tender when pierced with a fork. Stir halfway through cooking.
  6. Stir in the rinsed black beans and frozen corn. Cook uncovered for 2 to 3 minutes until heated through.
  7. Remove the skillet from the heat. If you are using cheese, sprinkle it evenly over the top of the skillet mixture. Cover the skillet for 2 minutes to allow the cheese to melt.
  8. Garnish with fresh cilantro before serving your easy sweet potato skillet dinner.

  • For a ground turkey sweet potato skillet variation, substitute the ground beef with 1 pound of ground turkey.
  • If you prefer a less traditional flavor, skip the taco seasoning and use 1 teaspoon cumin, 1 teaspoon chili powder, and 1/2 teaspoon smoked paprika instead.
