Prepare this easy, cheesy Tater Tot Breakfast Casserole featuring sausage and eggs for a satisfying family meal or weekend brunch.

  • 1 (32 ounce) package frozen tater tots
  • 1 pound breakfast sausage, cooked and drained
  • 1 cup chopped onion
  • 10 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Arrange half of the frozen tater tots in a single layer on the bottom of the prepared baking dish.
  3. Sprinkle the cooked sausage and chopped onion evenly over the tater tots layer.
  4. Top the sausage and onion mixture with 1 cup of the shredded cheddar cheese.
  5. Place the remaining tater tots over the cheese layer.
  6. In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  7. Pour the egg mixture slowly and evenly over the tater tots in the baking dish.
  8. Cover the dish with aluminum foil and bake for 30 minutes.
  9. Remove the foil, sprinkle the remaining 1 cup of cheese over the top, and bake uncovered for another 15 to 20 minutes, or until the eggs are set and the cheese is melted and lightly golden.
  10. Let the casserole rest for 5 minutes before slicing and serving.

Notes

  • For a make-ahead version, assemble the casserole completely (do not bake) and cover tightly. Refrigerate for up to 24 hours. Add 10-15 minutes to the initial covered baking time if baking directly from the refrigerator.
  • To make this gluten-free, confirm your tater tot brand is certified gluten-free.
  • For a vegetarian option, omit the sausage and substitute with 1 cup of sautéed mushrooms and bell peppers.
