1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
1/4 cup low-sodium soy sauce
2 tablespoons honey
1 tablespoon rice vinegar
1 teaspoon grated fresh ginger
1 clove garlic, minced
1/4 teaspoon sesame oil
1 head butter lettuce, leaves separated
1/4 cup shredded carrots
2 tablespoons chopped green onions
1 tablespoon toasted sesame seeds
Instructions
In a bowl, whisk together soy sauce, honey, rice vinegar, ginger, garlic, and sesame oil.
Add the chicken pieces to the bowl and toss to coat. Let it marinate for at least 15 minutes.
Heat a large skillet or wok over medium-high heat.
Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes.
Spoon the teriyaki chicken mixture into the separated lettuce leaves.
Top with shredded carrots, green onions, and sesame seeds.
Serve immediately.
Notes
For a spicier kick, add a pinch of red pepper flakes to the marinade.
You can substitute chicken breast for thighs if you prefer.
