A hearty and comforting Tuscan White Bean Soup, perfect for a cozy fall meal. This recipe is designed to be simple and satisfying, bringing the flavors of Italy to your kitchen.

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • 6 cups vegetable broth
  • 2 (15-ounce) cans cannellini beans, rinsed and drained
  • 1 (15-ounce) can great northern beans, rinsed and drained
  • 1 bay leaf
  • Salt and freshly ground black pepper to taste
  • Optional: Crusty bread for serving

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Stir in garlic, rosemary, thyme, and sage. Cook for 1 minute more until fragrant.
  4. Pour in vegetable broth and add the rinsed beans and bay leaf.
  5. Bring the soup to a boil, then reduce heat and simmer for at least 20 minutes, or until vegetables are tender and flavors have melded.
  6. Remove the bay leaf.
  7. Season with salt and pepper to taste.
  8. Serve hot, with crusty bread if desired.

Notes

  • For a creamier soup, you can mash some of the beans against the side of the pot or blend a portion of the soup.
  • Feel free to add other vegetables like spinach or kale in the last 5 minutes of simmering.
