A simple recipe for fluffy, hearty pancakes made entirely without animal products, using banana and oats as main ingredients.

  • 1 cup rolled oats
  • 1 cup unsweetened plant milk (soy or almond recommended)
  • 1 ripe banana, mashed
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon maple syrup (optional)
  • 1 teaspoon vanilla extract
  • Oil for the griddle

Instructions

  1. Place the rolled oats in a blender or food processor. Pulse until the oats resemble a coarse flour.
  2. Transfer the oat flour to a mixing bowl. Add the baking powder, cinnamon, and salt. Whisk to combine the dry ingredients.
  3. In a separate bowl, mash the ripe banana until smooth. Stir in the plant milk, maple syrup (if using), and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine. Let the batter rest for 5 minutes.
  5. Heat a lightly oiled griddle or non-stick pan over medium heat.
  6. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  7. Cook for 3 to 4 minutes per side, until bubbles appear on the surface and the edges look set. Flip and cook the second side until golden brown.
  8. Serve immediately with your preferred toppings.

Notes

  • For gluten-free pancakes, ensure you use certified gluten-free rolled oats.
  • If you prefer thicker pancakes, let the batter rest for 10 minutes, or add 1 tablespoon of oat flour at a time until desired consistency is reached.
  • You can add a few chocolate chips or chopped nuts to the batter before cooking.
