Instructions
Combine the plant milk and apple cider vinegar in a small bowl. Let it sit for 5 minutes to curdle slightly; this acts as your vegan buttermilk.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, poppy seeds, and lemon zest.
Add the melted vegan butter and vanilla extract to the vegan buttermilk mixture. Whisk briefly.
Pour the wet ingredients into the dry ingredients. Mix gently with a whisk or spatula until just combined. Do not overmix; a few lumps are fine. Overmixing develops gluten and makes pancakes tough.
Heat a lightly oiled griddle or non-stick pan over medium heat. Test the temperature by flicking a drop of water; it should sizzle immediately.
Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook for 2 to 3 minutes until bubbles appear on the surface and the edges look set.
Flip the pancakes and cook for another 1 to 2 minutes until golden brown and cooked through.
While pancakes cook, prepare the glaze: Whisk the powdered sugar, lemon juice, and lemon zest together until smooth. Add more lemon juice, a few drops at a time, if the glaze is too thick.

Notes
For extra fluffiness, let the mixed batter rest for 5 minutes before cooking. This allows the baking powder to activate fully.
