3 cups cooked, cold day-old white rice
2 tablespoons vegetable oil, divided
1 cup mixed vegetables (peas, carrots, corn)
1/2 cup chopped onion
2 cloves garlic, minced
2 large eggs, lightly beaten
2 tablespoons soy sauce
1 teaspoon toasted sesame oil
For the Sauce:
1/4 cup soy sauce
2 tablespoons rice vinegar
1 tablespoon honey or maple syrup
1 tablespoon grated fresh ginger
1 teaspoon toasted sesame oil
1 teaspoon cornstarch
1/4 cup water
Instructions
Prepare the sauce: Whisk together soy sauce, rice vinegar, honey, grated ginger, sesame oil, cornstarch, and water in a small bowl until smooth. Set aside.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Pour in the beaten eggs and quickly scramble until just set. Remove the eggs and set them aside.
Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the onion and cook for 2 minutes until softened.
Add the mixed vegetables and minced garlic. Stir fry for 3 to 4 minutes until the vegetables are tender-crisp.
Add the cold rice to the skillet. Break up any clumps with your spatula. Stir fry for 3 minutes, allowing the rice to heat through and lightly brown in spots.
Return the scrambled eggs to the skillet. Pour the prepared Sesame Ginger Sauce over the rice mixture.
Stir quickly and constantly until the sauce thickens slightly and coats the rice evenly, about 1 minute.
Stir in the 2 tablespoons of soy sauce and 1 teaspoon of toasted sesame oil. Taste and adjust seasoning if needed.
Serve immediately.
Notes
Using cold, day-old rice prevents the fried rice from becoming mushy.
Cook the rice over high heat to achieve a slight char, similar to restaurant style.
You can substitute broccoli florets or chopped bell peppers for the mixed vegetables.
