Make this creamy, hearty Zuppa Toscana soup at home. This recipe uses spicy Italian sausage, potatoes, and kale in a rich broth, mimicking the popular restaurant version.

Ingredients

  • 1 pound spicy Italian sausage, casings removed
  • 4 slices bacon, chopped
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 pound Yukon Gold potatoes, thinly sliced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1/2 cup water
  • 1 cup heavy cream
  • 3 cups chopped kale, stems removed
  • Salt and black pepper to taste

Instructions

  1. In a large pot or Dutch oven, cook the chopped bacon over medium heat until crisp. Remove bacon with a slotted spoon and set aside for garnish. Leave about 1 tablespoon of bacon grease in the pot.
  2. Add the Italian sausage to the pot. Cook, breaking it up with a spoon, until browned. Drain off excess grease.
  3. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  4. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Pour in the chicken broth and water. Add the sliced potatoes, Italian seasoning, and red pepper flakes. Bring the mixture to a boil, then reduce heat, cover, and simmer for 15 minutes, or until the potatoes are tender.
  6. Stir in the heavy cream. Heat through gently, but do not allow the soup to boil after adding the cream.
  7. Add the chopped kale. Cook for 3 to 5 minutes until the kale wilts.
  8. Season with salt and pepper to your preference.
  9. Ladle the soup into bowls and top each serving with the reserved crispy bacon pieces.

Notes

  • For a slower cooking method, you can cook the sausage, onion, and garlic in a skillet first, then transfer everything to a slow cooker with the broth, potatoes, and seasonings. Cook on low for 6 to 8 hours or high for 3 to 4 hours. Stir in the cream and kale during the last 30 minutes of cooking.
  • If you prefer a less spicy soup, use mild Italian sausage and reduce the red pepper flakes.
  • You can substitute half-and-half for heavy cream to slightly reduce the fat content.
