2 cups fresh or frozen blueberries
1 cup water
3/4 cup granulated sugar (adjust to taste)
1 teaspoon vanilla extract (optional)
Instructions
Combine the blueberries, water, and sugar in a medium saucepan.
Place the saucepan over medium heat. Stir the mixture occasionally until the sugar dissolves and the mixture begins to simmer.
Once simmering, reduce the heat to low and let it cook for 15 to 20 minutes. Stir occasionally. The berries will break down, and the liquid will reduce and thicken slightly.
If you prefer a smoother syrup, carefully mash the berries against the side of the pot with a spoon as they cook. For a very smooth syrup, strain the mixture through a fine-mesh sieve after cooking, pressing down on the solids to extract all liquid. Discard the solids.
Remove the syrup from the heat. Stir in the vanilla extract, if using.
Allow the syrup to cool completely. It will thicken significantly as it cools.
Pour the cooled syrup into an airtight container for storage.
Notes
For a tangier flavor, add 1 teaspoon of fresh lemon juice with the vanilla extract.
If you want a very thick syrup, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water in a small bowl. Stir this slurry into the simmering syrup during the last 5 minutes of cooking until it reaches your desired thickness.
You can substitute honey or maple syrup for the granulated sugar, but you may need to adjust the liquid amount slightly.
This syrup is excellent drizzled over yogurt, ice cream, or used as a base for cocktails.
