  • 1 box refrigerated pie crusts (2 crusts)
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 6 cups peeled, cored, and diced apples (about 4-5 medium apples)
  • 2 tablespoons unsalted butter, cut into small pieces
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon turbinado sugar (for sprinkling)

Instructions

  1. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, whisk together the granulated sugar, flour, cinnamon, nutmeg, and salt.
  3. Add the diced apples to the bowl and toss to coat them evenly with the sugar mixture.
  4. Unroll the pie crusts onto a lightly floured surface. Cut out 4-inch circles from each crust. You should get about 6-8 circles per crust, depending on their size.
  5. Place about 2-3 tablespoons of the apple filling onto one half of each pie crust circle, leaving a small border. Dot the filling with a few pieces of butter.
  6. Brush the edges of the pie crust with the beaten egg wash. Fold the other half of the crust over the filling to create a half-moon shape. Press the edges firmly to seal, then crimp with a fork.
  7. Place the hand pies on the prepared baking sheets. Cut a few small slits in the top of each pie to allow steam to escape.
  8. Brush the tops of the hand pies with the remaining egg wash and sprinkle with turbinado sugar.
  9. Bake for 20-25 minutes, or until the crust is golden brown and the filling is bubbly.
  10. Let the hand pies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool further.

Notes

  • You can use your favorite type of apples for this recipe, such as Honeycrisp, Gala, or Fuji.
  • If you don’t have turbinado sugar, you can use granulated sugar or skip this step.
  • These hand pies are best enjoyed warm, but they are also delicious at room temperature.
