1 3/4 cups Oreo cookie crumbs (about 30 cookies)
1/4 cup unsalted butter, melted
2 (8 ounce) packages cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 1/2 cups heavy whipping cream, cold
1/2 cup Oreo cookie crumbs, for topping
Instructions
Combine the 1 3/4 cups of Oreo crumbs and melted butter in a bowl. Press the mixture firmly into the bottom of a 9-inch springform pan. Place the crust in the freezer while you prepare the filling.
In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Add the powdered sugar and vanilla extract, mixing until fully combined and creamy.
In a separate, clean bowl, whip the cold heavy whipping cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture in two additions until just combined. Do not overmix.
Pour the filling over the chilled crust and spread it evenly with a spatula.
Cover the cheesecake loosely with plastic wrap and refrigerate for at least 6 hours, or preferably overnight, until firm.
Before serving, carefully remove the sides of the springform pan. Sprinkle the remaining 1/2 cup of Oreo crumbs over the top.
Notes
For the best crust, use the back of a measuring cup to press the crumbs evenly into the pan bottom.
Ensure your cream cheese is fully softened to avoid lumps in the filling.
