Make a decadent, no-bake cheesecake inspired by Samoa cookies, featuring a chocolate cookie crust, creamy filling, homemade caramel sauce, toasted coconut, and a chocolate drizzle.

  • 1 1/2 cups chocolate cookie crumbs (like Oreo wafers)
  • 1/4 cup unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream
  • 1 cup caramel sauce (store-bought or homemade)
  • 1 1/2 cups sweetened flaked coconut
  • 1/2 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Prepare the crust: Mix the chocolate cookie crumbs and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan. Chill the crust for 15 minutes.
  2. Toast the coconut: Spread the flaked coconut on a baking sheet. Bake at 350°F (175°C) for 5 to 8 minutes, watching closely until golden brown. Set aside.
  3. Make the filling: In a large bowl, beat the softened cream cheese until smooth. Gradually beat in the powdered sugar and vanilla extract.
  4. Whip the heavy cream separately until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined.
  5. Pour the cheesecake filling over the chilled crust and smooth the top. Refrigerate for at least 6 hours, or preferably overnight, until firm.
  6. Prepare the drizzle: Combine the chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring until smooth.
  7. Assemble the cheesecake: Once the cheesecake is set, carefully run a knife around the edge and release the springform ring. Drizzle the top generously with the caramel sauce. Sprinkle the toasted coconut evenly over the caramel layer.
  8. Drizzle the melted chocolate mixture over the top in a decorative pattern. Slice and serve cold.

Notes

  • For a thicker caramel layer, warm the caramel sauce slightly before pouring it over the set cheesecake.
  • If you do not have a springform pan, line a regular pie dish with plastic wrap before pressing in the crust for easy removal.
  • Use high-quality vanilla extract for the best flavor in the filling.
