1.5 lbs salmon fillet
1 lb broccoli florets
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 red onion, cut into wedges
1/4 cup soy sauce
1/4 cup mirin
2 tablespoons honey
1 tablespoon sesame oil
1 clove garlic, minced
1 teaspoon grated fresh ginger
Sesame seeds, for garnish
Green onions, sliced, for garnish
Instructions
Preheat your oven to 400°F (200°C).
In a small bowl, whisk together soy sauce, mirin, honey, sesame oil, garlic, and ginger to make the teriyaki sauce.
Arrange broccoli florets, bell pepper pieces, and red onion wedges on a large baking sheet.
Pour half of the teriyaki sauce over the vegetables and toss to coat.
Place the salmon fillet on the same baking sheet among the vegetables.
Brush the remaining teriyaki sauce over the salmon.
Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender-crisp.
Garnish with sesame seeds and sliced green onions before serving.
Notes
For extra flavor, you can marinate the salmon in some of the teriyaki sauce for 15-30 minutes before baking.
Feel free to add other vegetables like snap peas or carrots.
Adjust the sweetness of the teriyaki sauce by adding more or less honey.
