Ingredients

  • 1.5 lbs salmon fillet
  • 1 lb broccoli florets
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, cut into wedges
  • 1/4 cup soy sauce
  • 1/4 cup mirin
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • Sesame seeds, for garnish
  • Green onions, sliced, for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, whisk together soy sauce, mirin, honey, sesame oil, garlic, and ginger to make the teriyaki sauce.
  • Arrange broccoli florets, bell pepper pieces, and red onion wedges on a large baking sheet.
  • Pour half of the teriyaki sauce over the vegetables and toss to coat.
  • Place the salmon fillet on the same baking sheet among the vegetables.
  • Brush the remaining teriyaki sauce over the salmon.
  • Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender-crisp.
  • Garnish with sesame seeds and sliced green onions before serving.

Notes

  • For extra flavor, you can marinate the salmon in some of the teriyaki sauce for 15-30 minutes before baking.
  • Feel free to add other vegetables like snap peas or carrots.
  • Adjust the sweetness of the teriyaki sauce by adding more or less honey.
